Inés is a restaurant and a tribute at the same time.
This is a gastronomic proposal by chef Juan Carlos Donoso Romero with the purpose of preserving Ecuadorian cuisine, expressing the traditional recipes of Ecuadorian mothers and grandmothers with avant-garde techniques.

Sustainability and excellence as a goal; the local product and its correct handling as an ecological medium; integration with producers and their needs as a tool for social change. At Inés, the search for these premises marks the temporality of our dishes.
NESTS Project
We join this great project together with the Hotel Illa Experience to prepare young people to support their kitchens. We learn from them the ancient practices of their cuisine and we share our gastronomic knowledge.
Flavors and knowledge
We rescue traditional recipes with a mixture of flavors from the Ecuadorian coast, the Andes, Galapagos and the Amazon. Enjoy the four worlds in an oasis of flavors and knowledge.

We take care that the products we use in our kitchen come from places that allow us to maintain the sustainability of the families of the country.
Our Menu
Tasting is a journey through situations, landscapes and sensations of our country expressed in dishes with intriguing flavors. A unique mix of modern techniques and tradition expressed with neatness and beauty.
To know in depth and live the experience of Inés’ cuisine, the tasting menu is essential.
Inés offers three options:
Option 1
Tasting menu for $80 per person, taxes included and drinks not included.
Option 2
A la carte menu, appetizer, starter, main course and dessert, drinks not included.
Option 3
Tourist menu created by the interns of the ‘Nest’ program (only served at noon)
